Home made cinnamon sugar apple sauce

It really does not get much easier than this!

Fill a crock pot with chopped apples- big bite size. Add:
1/4 cup sugar
1/4 cup brown sugar
1 T lemon juice
1 T cinnamon
Cook on low for 2 to 3 hours, stirring occasionally, just until apples start to break down and mash easily when stirred. Then, transfer to a blender and combine for a just a bit; seriously it's a matter of seconds. Just until the apple sauce is fairly smooth. Serve warm or let chill in the fridge for later.

Soda Brisket Tacos


2 pound beef brisket
2 cans Dr. Pepper, the kind with real sugar
A few shakes of garlic powder
A few shakes of chili powder
1/2 red onion
2 fresh garlic cloves
Corn tortillas
BBQ Sauce (We like Sweet Baby Rays Raspberry Chipotle BBQ Sauce)
Toppings of choice

Cook brisket, soda and spices in the croc pot on low for about six hours. Remove meat from liquid, slice and set in a serving bowl. Top with BBQ sauce.

Saute onion and chopped garlic cloves until soft in a skillet over medium heat. Add to the brisket and BBQ sauce.

Serve inside toasted corn tortillas with your favorite toppings. I like to add sour cream, more BBQ sauce, cilantro, tomato and corn.

Feijuada

Place a pork roast in the crocpot
Add 2 to 4 cans black beans
2 cups beef broth
2 tablespoon worchestire sauce
1/4 cup chopped cilantro
1/2 chopped onion
1 bayleaf
1 teaspoon garlic
salt and pepper to taste

Serve over rice with orange slices.

Roast

1 3 to 5 pound roast
1 can beef broth
1/2 of that can water
1 can stewed tomatoes
peeled small potatoes
baby carrots
garlic salt, onion powder, pepper, season all

Cook 4 to 6 hours in a crocpot. Add the potatoes and tomatoes one hour before serving. Add the carrots 15 minutes before serving.

Beef Stroganoff

The original recipe:
1 pound beef roast
1 can cream of mushroom soup
Broth from 1 can of french onion soup
Cook in croc pot 4 to 6 hours. Then, cube the beef and add 1 cup of sour cream. Serve over rice or pasta.

My gluten free version:
1 pound beef roast
1 can progresso gluten free creamy mushroom soup
1/2 onion sliced
Cook in croc pot 4 to 6 hours. Then, cube the beef and add 1 cup of sour cream. Serve over rice or pasta.

Chicken Cacciatore

Chicken Breasts
Italian salad dressing
Diced tomatoes
Mushrooms, sliced

Place desired amount of chicken breasts in a crock pot. This is a pretty forgiving recipe, so the chicken doesn't have to be thawed. Add a can or two of diced tomatoes, a handful of mushrooms, and pour some salad dressing over the top. Cook for 4 to 6 hours and serve over rice or pasta.

Spicy Chicken Tomato Soup

2 cans (14.5 oz each) Chicken Broth
1 can (10 oz) tomato puree
1 can (10 oz) diced tomatoes and green chilies
3 cups cubed chicken
2 cups frozen corn
1 large onion, chopped
2 minced garlic cloves
1 bay leaf
1 teaspoon ground cumin
1 teaspoon salt
1 teaspoon chili powder
1/8 teaspoon cayenne pepper
1/ teaspoon pepper

Cook together in the croc pot on high for 4 hours. Discard bay leaf before serving with tortillas and sour cream.

Asian Style Chicken Stew


1 chopped onion
1 chopped red pepper
1 T chopped ginger
Baby carrots
2 crushed garlic cloves
1 pound chicken breasts
¼ cup low sodium soy sauce (or gluten free teriyaki sauce)
¼ cup orange juice
1 T corn starch, dissolved in ¼ cup hot water

Place all ingredients except the cornstarch in a crocpot. Cook for 6 to 8 hours. Add cornstarch with 30 min left to cook.

Chipotle and Lime Chicken


1 lb sml red potatoes, skinned and quartered
4 boneless, skinless chicken breasts
1 chipotle pepper, minced
2 tablespoons adobo sauce
1 tablespoon fresh lime juice
¼ cup heavy cream
½ cup sour cream
12 oz baby spinach leaves


Place potatoes and chicken in croc pot. 

In a small bowl, combine adobo sauce, chipotle, lime and cream. Pour over chicken. Cover; cook on low 6 to 8 hours. 

Remove chicken and potatoes; cover to keep warm. Discard all but 1 cup of liquid from croc pot. Add sour cream and spinach to 1 cup of liquid. Stir and cook on high 5 to 10 minutes, or until spinach has wilted and sauce is warm. Pour over chicken and potatoes and serve immediately.
