Mandarin Chicken


4 Chicken breasts
1/3 cup flour
1 t salt
1/3 c shortening
1 eleven oz can mandarin oranges
1/3 c soy sauce (or gluten free teriyaki sauce)
¼ c packed brown sugar
½ t nutmeg


Coat chicken with flour and salt. Brown in shortening. Place in dish. Drain oranges, saving juice. Combine juice with soy suace, brown sugar, and nutmeg. Pour over chicken. Bake at 350 for 40 minutes. Arrange oranges over chicken, bake 20 more minutes. Serve with rice.
